About sausages

In the traditional sense, making sausages is a method of preserving meat—namely, the still-nutritious good bits of the animal that may not look as appetizing to eat like a beef filet or whole chicken breast would. Unfortunately, sausages are often thought of as highly processed tubes of unwanted junk meat scraps packed in with food additives and preservatives. While that may be an accurate description of many mass-produced, pre-packaged sausages, it’s not at all true for fresh, made-in-house or homemade sausages.

The different types of sausages

Making delicious and healthy sausages is not complicated. The meat and spices are combined with fat, fruit, maple syrup, other animal ingredients or other palate-pleasing ingredients before being placed in a casing. Sausage varieties vary depending on where you live—here’s a look at three common types:

  • Fresh sausage: Fresh sausage, also called raw sausage, is an uncooked or uncured mixture of meat, fat for flavor and spices. You can buy it in casings or loose like ground meat.
  • Cooked sausage: After the casing is filled, the market may cook it, which means it only needs a simple reheating on your part. Cooked sausages come in links or patties to save you prep time in the kitchen.
  • Dry or cured sausage: Also known as summer sausage, cured or dry sausages have been smoked or fermented before being sold to customers. They are fine to leave at room temperature, which makes them a perfect food for traveling, hiking, camping and road trips.
  • Kielbasa: Kielbasa is also known as Polish sausage. Kielbasa is made of pork or a beef and pork combo, and is typically smoked.

Casing

Beef casing, pork casing and lamb casing are the animal intestines used to hold the filling together. These sausage casings are high quality and most often used so no animal parts go to waste. Watch out for factory-made links using casings that are not natural.

There’s nothing quite like fresh sausage made in-house daily at your local meat market. Call the team at Tony’s Delicatessen & Fresh Meats to order your favorite deli meats in Williamsport, PA today!
